Very basic question!

I am sure what I need to know is completely easy - all I want to so is use my own image instead of the standard submit button in the search widget

Please can someone point me in the right direction of where to change this please?

Here is a template override for Search.SearchForm.cshtml that you can put in your theme's Views/Parts folder:
@using Orchard.Search.ViewModels;

@using(Html.BeginForm("index", "search", new { area = "Orchard.Search" }, FormMethod.Get, new { @class = "search-form" })) { 
        @Html.TextBox("q", (SearchViewModel)Model.ViewModel.Query, new {placeholder = T("Search")})
        <button type="submit" class="search-button">@T("Search")</button>
After that, it's just a matter of styling
