So I am having more trouble with the blog post layout. I'm trying to change the layout of the blog post so I can rearrange how the post title, content, tags, date, comment count, and comments are displayed. Where can I find a good template for that?

Use Placement.info to control where the different parts are placed. Content.cshtml contains the different zones that Placement can control, and you can override that if you need the zones laid out differently.

What's the best practice regarding Placement.info. Should I place all of my layout in the same placement file or can I create separate ones to segregate better?

AFAIK it there can only be one Placement file per Module. If it's getting troublingly large you might want to split your work into separate modules or use inheriting themes.

It's the theme I'm curious about. It's not getting too big yet, but it may.

Modules and Themes are pretty much the same thing, they just live in different base paths.
